Easy Homemade Cashew Creamer

Friends, this is my go-to coffee creamer. It is smooth, creamy, and has the perfect amount of sweetness. This Cashew Creamer is the bee’s knees. If you want some morning goodness in your coffee, this is the recipe for you.

During the week, if my mornings are crazy busy, I won’t always make this creamer, but on the weekends, this is my jam. Every Saturday begins with the meditative practice of blending cashews in the Vitamix. It’s really the calm and peaceful sound that everyone loves to hear at 8 AM right? Ok, so the blending isn’t very relaxing but once that vegan cream is being poured into my mug of coffee, I’m a happy gal.

Even the Picky Husband enjoys this creamer. He has always been a half and half creamer kind of guy. But this cashew creamer has actually been helpful in steering him off the dairy milk path. It mimics the thickness in dairy creamer and has that little sweetness that Adam looks for in a creamer. It’s a winner, guys.

One of the great things about this dairy free creamer is that you can choose what type of sweetener you want to use! You can naturally sweeten this recipe with dates or go for good old maple syrup. Honestly, both ways taste very similar. The dates give a slightly more caramelly flavour and the maple syrup adds a maple flavour (obviously). But both are subtle and you can’t go wrong with either. So whatever one you have in your pantry will do the job here.

here are a few reasons why I love this cashew creamer, so listen up!

  1. You need your creamer to be creamy right? I mean both words come from the same root word. So it would just be wrong if your creamer was lacking in the creamy department. And I’ll tell ya, this one is not lacking at all.
  2. It stores decently for 1-2 days in the fridge, but it is best fresh. Like I mentioned above it’s become a fun little routine for me on the weekends to make this creamer from scratch. When it’s made the day of, there is nothing like it. It really hits the spot.
  3. When I wake up in the morning, I can’t wait for that warm coffee. I try to have a big glass of water first thing when I wake up, but let’s be honest, sometimes your tastebuds and brain cells just want a cup of joe first. It’s not the glass of water that I look forward to in the morning. It’s my coffee with a big splash of this creamer in it. Morning routines are so important to the body and the mind, so I’m not going to mess with a good thing.

If you’re a coffee drinker, you know that there is no better routine to starting your day off right then taking a nice warm sip of coffee. I’m confident enough to say that this cashew creamer will bring your morning routine up a few notches. It’s pure gold. This creamer brings a little bit of happiness to your lips, even if it only lasts for a few minutes before you are rushing out the door.

Prep Time 15 minutes
Servings 4 servings

Ingredients

sweetened with maple syrup

  • 1/2 cup raw cashews
  • 1-2 tbsp maple syrup
  • 3/4 cup water
  • pinch sea salt
  • 1/2 tsp vanilla

sweetened with dates

  • 1/2 cup raw cashews
  • 1 1/4 cups water
  • 2 dates pits removed
  • pinch sea salt
  • 1/2 tsp vanilla

Instructions

  • If you don’t have a high-speed blender make sure to soak the cashews overnight.
  • Blend all the ingredients together until smooth. Then use a nut bag to filter the cream and to stop any cashew matter passing through.
  • This creamer is best when fresh. But stores nicely in the fridge for 1-2 days after. Just give it a little blend before using it.

  • Remove the pits from the dates, and then blend all the ingredients together until smooth. Then use a nut bag to filter the cream and to stop any cashew matter passing through.
  • This creamer is best when fresh. But stores nicely in the fridge for 1-2 days after. Just give it a little blend before using it.

Notes

the date-sweetened creamer requires more water, or paste forms.
