You know, it’s tough having a picky eater for a husband. But over the years I’ve had to think of it as more of a blessing because he is always honest and always has good feedback on what would make a dish better. So I asked him what his Top 5 Favourite Greens, Eggs, and Yams recipes were, and this is what he came up with. These are healthy recipes for picky eaters of all types! Drum roll, please.

These muffins are gluten free, vegan and refined sugar free! They are a cool recipe because they are completely sweetened with one whole orange and dates! They are based on a childhood classic that my mom used to make. She was always looking for healthy snacks for a picky eater because (surprise!) I actually used to be quite the picky eater myself. These vegan orange muffins have now become a staple in my house and we love having a jar of them on the counter.

This is a real crowd-pleaser, and my Picky Husband likes to just sit on the couch and gorge down a full bowl by himself.
I think the real star of this cashew dip is the roasted garlic. The aroma that erupts from the kitchen while the garlic is roasting is next level! Number three is this killer soup. It is the perfect vegan recipe for meat eaters to get them on the meat-free train. I make it almost every week for Adam’s lunch and he does not get sick of it (SCORE!). The colour of this Broccoli Kale Soup might not be the most charming but once you take one spoonful of this flavour-packed soup you will be grinning ear to ear.

These buffalo cauliflower tacos are a go-to dinner in our home. I never thought Adam would ever eat tacos without cheese, but with the cashew-lime sauce on top- he doesn’t miss the cheese one bit. Number 5 for healthy snacks for picky eaters is this Mango Guacamole . How could this not be in the Picky Husband’s Top 5?! He’ll deny being an avocado lover, but he sure lights up when this guac is thrown together.
This dish takes 15 minutes to make and the mango makes for a great addition. It beautifully compliments the avocado and seasonings. It adds the perfect amount of sweetness to an already delicious bowl of guacamole. Dip your chips in, and I bet you can’t stop at just one!

Most recipes I post tend to get the Picky Husband’s thumbs-up, as it is one of my focuses for this blog. But there are some ingredients that Adam just doesn’t like that I still cook with. For instance, he doesn’t like yams or smoothies very much. But I’m still going to make smoothie recipes because they are amazing.
It is neat to see how much Adam’s opinion of some foods has changed over the years, and since I started Greens, Eggs and Yams. He used to hate mushrooms and now he actually enjoys them! I never thought that day would happen. So if you have a picky eater, little or big, perhaps they will grow to like some foods if you just keep giving them different options.
