Watermelon Mint Lemonade
A refreshing and delicious twist on the classic summer drink. If you love watermelon and lemonade this drink is sure to quench your thirst in any heat.
Servings: 2 people
- 1 1/2 cups watermelon juice (roughly 1/2 mini watermelon or 3-4 cups of chopped watermelon)
- 1 cup filtered water
- 2 lemons, juiced (or 1/2 cup lemon juice)
- 2 tbsp maple syrup
- 1/4 cup fresh mint
Chop your watermelon into cubes and measure out 3-4 cups of the watermelon. Add the watermelon to a blender and blend on high for 1 minute. Using a mesh strainer, pour the watermelon juice into the strainer over a liquid measuring cup. Let the liquid drain into the cup, as the strainer removes the watermelon meal.
The watermelon should produce 1 1/2 cups of juice which is what you need for the recipe. Add the watermelon juice, mint leaves, lemon juice, water and maple syrup to a jar with ice in it. Place a lid on the jar and shake it until the lemonade is cold. Alternatively, you can add the lemonade ingredients to a pitcher and let it sit in the fridge to chill, but the jar and ice will chill it instantly.
Serves 2. If there are leftovers, store the watermelon mint lemonade in the fridge for a few days. It will separate a little so shake it before enjoying again.
